I've noticed that schools in the northern hemisphere usually have multiple storeys whereas where I live it's mostly just 1 storey.

Well, schools in big cities are forced to use multilevel buildings, like in New York City. They can't build out, so they build up.
Varies from location to location. With that said, most public schools where I live are 1 or 2 levels, but private schools tend to build 3-5 levels. My school was mostly 2 or 3 levels with a 4 level clock/bell tower.

Well here are my old old buildings (where I spend my first 3 years):

I only had like 2 lesson's a week in my 3rd year on the top left building.

Yes, it's separated by road/houses but it's all still one school.
