A/ If it's an open casket funeral, the deceased's eyes are CLOSED...
B/ They don't take the entire eye ball, the often take the iris (the lens part)

Most skin that is taken comes from your thighs, chest, back. And taking skin is normally done when it's from young people. Old people are too wrinkly and stuff, so their skin is pretty useless for transplantations.
And on a side-note: Once u hit 50+ the chance of them taking an organ is really slim, cuz by then it's not in a very good shape anymore and therefore not suitable for young people.
However: there is an 'old for old' project:
Old(er) organs being transplanted into old people to extend their life. If u are old the chance of getting an actual transplantation from a young donor is very slim. Pretty good system, u don't need a organ that'll last another lifetime if u already are 60 or so.
Again: the above are the regulations for Belgium, afaik each country (or state) has it's own regulations concerning transplantations and organ donating.
