I know what parry ratio means, but how much does that 30% from dodging scrols realy means? i mean if some one hits you with a skill for about 5-6k dmg, how much will they hit when you have dodging scrool? and does pary ratio helps at mobs?or only in pvp?

it helps your defense...it lowers what they hit on you by a little bit

it helps in lowering the attack on an enemy for example a wizard has 700-1000 so if you have more parry ratio his attacks would be more close to 700 than 1000.

Parry doesn't reduce damage at all, just like attack rating doesn't increase damage at all.
Higher parry means a higher chance that the enemy will hit LOWER, but it doesn't actually reduce the damage.
ex Enemy hits 1-10 dmg High parry = more chance to hit a low damage, such as 1-2-3-4 etc.
Attack rating works the same way, higher attack rating = higher chance to hit a higher damage on your scale.
