is there any guide or something that can tell me what elements i get by destroying a weapon or armor?

You get the same deg and one deg less elements. Example : if you destroy a d5 armor, it can give you d5 and d4 elements.

ohhh ok is there a certain amount of elements you get per degree or certain lvl of armor/weapon

It depends. And you don't always get the same elements from destroying the same items.
