Melee, Ranged, or a Mixture of those?
Healer, Damager, Tanker.. ?
Talents is also very important.
TIP: Don't just make a character, browse Wowwiki.com for info and select the class you would like to play. Aim for a high-end gameplay class; meaning to really select your class carefully.
You could always start over, but having done the low lvl quests multiple times can be a big motivation killer.
(Talents really important, because some classes can be damage or/and heal, so dont go priest just to heal, also consider the fact that they can be an amazing damage class as a Shadow priest)
Every class has three talent trees (see them as skills, since you buy your actual spells from your class trainer).
Those three trees mean three complete different builds per class you can choose from.
You can re-spec ( get your talent points back and re-put them as u wish) but that will cost more and more money.
My advise: Think of what you would like to be, then you can scrap lots of classes(and their talent trees) from the list.
Choose from caster/healer/tank/melee damage. Meanwhile keep in mind that there are some classes that can be two of those, or even three.

Heal/DPS - Priest, Shaman (prolly heal mostly as shaman)
Heal/Tank - Paladin
Heal/DPS/Tank - Druid
DPS - Mage, Warlock, Rogue, Huntard (Hunter)
Tank/DPS - Warrior
Just don't try to DPS as a Pally, you'll just get laughed at.
Just try em all, pick what you like and go with it

You can start with that in fact
but then again, trying them all will not really be any help, you will not see each class to full high-end gameplay because i really doubt you will get a 70 for every class.
Choose wisely IMO, dont get strapped into a "omg i want a priest!" *lvls priest to 20* "omg rogues are imba" *makes rogue" and so on, like i did in the beginning.
You can always make 2 chars ofcourse, for example if you like ranged big damage you make a mage, and for change of gameplay, you make a melee class, like a rogue as well

Keep in mind, some classes rape others, that's just how shit goes.
Mage>Warrior>Rogue>Lock>Mage, shit like that.
Find something you like and go with it. If you find you don't like it endgame, it's now your farmer and money maker while you level your alt.
